Some of the finest mezcals in all of Oaxaca curated by the exceptional palates at Maison du Whiskey and Velier and bottled as it's found without any adjustment or alteration, these are the Palenqueros. Not only are these some of the world's most delicious and unique agave offerings but they're sold at an incredibly reasonable price considering where the market for rare agave is going. In addition, Maison & Velier are committed to treating their distillers right and highlighting their incredible skill and experience on each bottle. This spectacular Tobaziche is distilled by Juan Hernandez in the tiny pueblo of San Pedro Taviche. The Karwinskii type agave is hand harvested in the wild and roasted in traditional conical ovens. Milled by hand wooden hammer and stone, the wild agave is naturally fermented over 7 days in pine vats. Double distilled on 150 liter over direct fire, only 567 bottles were distilled of this very special mezcal.

The slow, seven-day fermentation process elicits some great aromas and flavors from this tobasiche. The nose starts off with crushed ice plants with a meaty, iron undertone before sweet hickory smoke and roasted agave make it to the party. Towards the end I got a hint of serrano pepper spice but after some time in the glass a wonderful charred pine needle wafted out. The palate was fun and interesting, mixing sweet and savory notes of Havarti cheese and sweetened cucumber juice. The finish was long and left a lingering green note center palate but I noticed as I exhaled I got a bit of something that immediately reminded me of kiwi-strawberry Snapple. It’s hard to believe that we could get a bottle like this at such a great price point.
