 Rarely has a 1995 Champagne presented itself with the kind of drive and structural power of this Fleury. With acidity that may bring tears to your eyes, this is not for the faint of heart. That extreme acidity tingles in the mouth, leaving flavors of pineapple, caramel candied lime and ginger in its wake. It requires crudo or sashimi—belly tuna would be insanely great with this wine.  There's a pleasing tension to this fresh Champagne, refined in texture and very elegant overall, offering a creamy mousse, a vein of saline-tinged minerality and flavors of chopped almond, vanilla pastry, poached quince and black currant.  The 1995 Extra Brut Millesime is really more wine than Champagne at this stage. A rich tapestry of honey, almonds sage and dried flowers caresses the palate as this sumptuous, full-bodied wine opens up in the glass. Hints of butter and tropical fruit emerge later, adding further shades of nuance. Texturally, the 1995 has an oiliness that recalls aged white Burgundy. My preference is to drink the Fleury wines a little younger than this, but there is no denying the 1995 has aged exquisitely. The 1995 is 80% Pinot Noir and 20% Chardonnay.  Vivid gold. Intriguingly perfumed, nuanced aromas of candied orange, Anjou pear, vanilla bean and honey, with a vibrant vein of chalky minerality. At once tangy and rich, displaying lively citrus and orchard fruit flavors buffered by deeper honey and floral qualities. In my experience no-dosage Champagnes are best consumed within a few years of their release rather than stashed in the cellar so I'd drink this complex, energetic bottling sooner than later. This producer, which raises its wines in barriques, farms its vines biodynamically, a relative rarity in Champagne. (JR)  (12/2010)

 80% Pinot Noir, 20% Chardonnay. Released two years ago. No malolactic fermentation. RS 13 g/l. A very smoky nose with a touch of cheese, then opening up gradually to reveal honey and biscuit. Absolutely delicious, very biscuity with dabs of apricot and honey. Choux pastry. Loads of spice and incredibly long. Deep and intense and very hard to spit. Also available as Extra Brut with 3 g/l RS and Doux with 55 g/l RS. It would be fascinating to compare these three. 17/20 points. (TC)  (2/2010)
