Winery Notes: Established in 2012, Maître de Chai is the personal project of Marty Winters and Alex Pitts. Maître de Chai translates to cellar master, or the person responsible for the development and aging of wine. The élevage for this wine was very simple: we harvested all of the fruit from the vineyard and had a 24 hour maceration of the juice and skins together.
