From Bourdy: "The only grape variety used to make Château Chalon, along with all Vin Jaune, is the Savagnin, which amongst other names used to be called 'Le Naturé' or 'Fromentin'. 2016 Domaine des Carlines Savagnin "En Beaumont" Côtes du Jura Blanc (Previously $35)

This is the new Jura project of Patrick Ligeron and 2016 is just the second vintage for this house. 100% Savagnin, this has flavors of ripe fruits like apricot and apples with a touch of ripe citrus fruits and pepper. This is rich, yet powerful with a beautiful balance and could be kept at least 10 years. It pairs well with fish, white meat with creamy sauces, and cheeses such as Comté, Morbier and Mont d’Or.
