From the cidery: "Hawk Haus is named after the kestrel nests found on the property and is a blend of Jonathan and Yarlington Mill apples. Pale, yellow-golden in color and lightly hazed with modest, tiny carbonation bubbles like the finest sparkling wines. The aroma is fresh cut apples and an earthy farmyard character. Very pleasant and grounded. Hawk Haus is big, soft and round on the palate with gentle acidity. Notes of cinnamon and brown sugar are reminiscent of apple turnover. 2016 Art & Science "Humble Cider" Apple Cider, Oregon (500ml)

This cider is made from foraged apples from the western side of the Willamette Valley known to locals as the West Valley. The fruit comes from old unsprayed wild or abandoned apple trees found along creeks, rivers and old original homestead orchards. The apples are picked and held in a cooler for 3-4 weeks to concentrate slightly prior to milling. The apples are then milled, pressed and allowed to ferment naturally with ambient yeast. This dry cider comes from E.Z. Orchards in Oregon's Willamette Valley, a place K&L customers might better know for its fabulous Pinots. At E.Z. Orchards they grow a selection of French, English, and early American apple varieties that they blend together to create a balanced cider in the French tradition. It smells like fall, with a gentle effervescence on the palate, and is full and round but not sweet. It pairs perfectly with food, particularly nuts and cheeses, but it's also a nice complement to savory dishes as well.
